Using /usr/bin/true as the executable dummies out the operation. Not many cycles wasted.

I have used dvdbackup in the past, and vobcopy will also mirror an entire disc. The result is a VIDEO_TS folder; you can make an ISO with the mkisofs utility. Remember to use the -dvd-video flag.

Criterion often uses LPCM audio. There was a period a few years ago when Handbrake would not see audio tracks of that type. They corrected it eventually.
I always do "HandBrakeCLI --scan -i " just as a sanity check to see that Handbrake sees what I expect to be there.

I have Ray Harryhausen discs where angle switches between the b&w and colorized versions.

You want to make an MKV version of a title in the backup?
Use MakeMKV -> Open File and navigate to the index.bdmv file in the BDMV folder. It will treat the backup as if it were the original disc and give all the title and track options.

Backup is grayed out once you have opened the disc. Either Close the disc from the File menu or don't open it when you first mount the disc.

I'm sure that there are NO black bars inside the mkv file. To add this, MakeMKV have to re-encode the stream from the Blu-ray, but this does not happen. Well, no, that's not right. Native Blu-ray is always 1920x1080 with square pixel sampling. Any title that is not exactly 16:9 will have black bars...

There is a free utility called "mediainfo": http://mediaarea.net/en/MediaInfo

For the DVDs: do you have Closed Caption subtitle tracks selected? Use of ccextractor to process these is a recent feature. If ccextractor is not installed properly the program becomes very slow. I always built from source when I was on SuSE. It always worked but Arch makes it easy.

If you don't select a closed caption track I don't believe ccextractor needs to be present. If you have slow speed without this sort of track then is must be some other issue.
