Annoyingly I've got a pile of DVD's/Blu-Rays that are sitting outside of my Plex collection because I can't convert them to MKV
Is there anything that I can do to get these ripped?

At least 2 of the disks on your list, DVD of xXx and BD of Rogue One, I have personally ripped without issue.
Knowing what errors you are receiving would be helpful in determining what your issue is.

For the DVD:
Most times, navigation errors are caused by unreadable data, which is why cleaning the disk usually fixes them.
As for CBD errors, what came before them was a request to seek to a location that the drive said couldn't be reached, which can be the same as above; a read error occurred, and the result was confusion. Again, cleaning is the first step.
Mike mentioned a couple of years ago that some drives do not REPORT a read error if they can "mostly read" a sector, but the data they "mostly read" is often invalid. Even if your drive was compatible with LibreDrive right now, LD firmware doesn't change that characteristic.
If MakeMKV finds data pointing outside the readable part of the disk, that's a navigation error, and the title can't be selected. All the other titles were shorter than 2 minutes, so they weren't picked up... and MakeMKV confusingly says "cannot open disk" when it doesn't find any valid titles.Complex multiplex encountered - 30 cells and 14834 VOBUs have to be scanned. This may take some time, please be patient - it can't be avoided.

This has successfully managed to record over 800 discs. These discs are the only ones that have failed and at different times during the process.
I may have tried a few times with some of them to record them but not all. Some of them may actually work if I try them again but what I wanted to do is try and identify the reasons (or simply start with one of them that is stubborn and see if there is anything that I can do).
I could try an alternative drive for the DVD's but the Blu-Ray will be a problem as this is the only one I have that reads Blu-Rays.
Is this normal though, I'd understand if there was a driver issue that didn't allow MakeMKV to work properly but not on less than 10% of the total number of discs.
I'll try this again and report back

Oh yeah - strangely using my laptop (which took a while longer) I only ended up with a fail of 3 files (none of which were the movie so I've won this battle).
Ok - I'll continue
