Apparently I need an AC 3 5.1 file to have acceptable audio. Any help is greatly appreciated.

Try using Handbrake to downmix to AC3?

I ripped this movie for my mother, but could not find the information I needed to rip the correct title since it could mismatch between different regions.

Due to regional disc encryptions and the depth of obfuscation, the ONLY way to guarantee the correct title On a disc such as this is to match the segment map. Two discs could have the right map linked to different titles. Never trust title numbers.

I use Process Monitor and play the movie in fast forward to pull the right map. If you’d like to know how to do it, there are good explanations on the makemkv forum.
