Very Slow, 10+ hours, to make an MKV file from a BluRay backup

To be honest, I haven't had a need to use MakeMKV for a very long time. I've kept installing the new versions though. In the last few months I needed to extract an MKV file from a BluRay backup (folder with BDMV file and folder called Certificate), and it's taking an extremely long time to do so. I've waited 8+ hours, and it still runs suggesting it may still take additional hours to complete. I've never waited long enough to see. As I said it's been going on for a number of months and updates and usually I just gave up and went on to something else.

I've tried going back to version 1.12.3 and get the same thing. I notice Activity Monitor says MakeMKV is only using about 1% of the processors, or less at times.

System is an iMac Pro (2017) with 8 cores, 64 GB ram, 3.2 GHz Intel Xeon W, and a couple of running apps that are idle. Its running High Sierra 10.3.6. It's got Java 8 update 191 installed. I do not have DASPI installed. Below is a log from the last session, but I only let it run for a while. I had just stopped it after 8 hours to turn on logging.

My MakeMKV folder only has these files in it:

screen.conf
settings.conf
update.conf

I'm afraid I don't know anything about Linux or programming. I'm able to use terminal if someone tells me what to enter step by step. But any help to solve this would be appreciated.

I too had not used MakeMKV for a while and upgraded to v 1.14x; I found it incredibly slow too.
initially I downgraded to V1.12x, which worked until 1 Feb, when the current password expired and new one not available.
I went back to v1.14.2 and had a more detailed look around.
I am using Win 7 Pro 64Bit, on an IMac; until v1.14x, DVDs and BluRays were ripped rapidly.
No changes in equipment.
The fix which worked for me was to go into Preferences and change Advanced/Default Profile from AACStereo to Default.
