Is anyone else's Rocketman from Redbox ripping a version with wildly annoying commentary present throughout the whole film? Not sure if theres a work around as im only seeing 1 playlist...

Are you letting MakeMKV select the audio tracks with its default rule, or have you tried overriding it?

The descriptive audio track sometimes has "better specs" than the movie audio track, and may get selected ahead of it.

You can override the rule, or change it, in Expert mode. See this topic for more information on Expert mode.

Most playback software (and hardware) play the FIRST audio track they find, so order is more important than meta data (like "default" flags).

My workflow is to have MakeMKV rip ALL audio and subtitle tracks, and use VLC to find out which ones I want. Then I use handbrake to put them in the "proper order" for playback, although you could also use mkvmerge from mkvtoolnix to do it if you don't also want to convert the video to a more-efficient encoding.

Remove the first "DD Surround 5.1 English" audio track right below the Rocketman title (after you expand the Rocketman 34.6 GB title).

If you ripped it with all of the English (or what ever language) you can use MKVToolNix to change the default audio track. It only takes a few seconds to do.
